Unique, one-off culinary knives designed with precision & performance at their heart.

Based in the foothills of the Black Mountains in Wales, surrounded by rugged coalfield, lush rolling valleys and dense broadleaf forests, I create one-off custom kitchen knives built to last & love for a lifetime.

The ever-changing surroundings of my workshop directly influence and inform my design process. I hope that, even in some small way, the spirit of the Monmouthshire hills live within my knives.

Individually designed.

I work directly with every one of my customers, designing their knife individually for them. Becoming the proud owner of a hand crafted Lubel Knife is a highly personal and engaging experience.

We start with a conversation to understand how and what you cook. Into the design process, I create photo-realistic designs, with a variety of material and profile options until we find the perfect design for you. Now I start forging, grinding, shaping, polishing and sharpening until the knife is complete, exactly to the design we have created together.

The finest materials & processes.

I only use the finest materials and processes in the making of my knives. I source wood from the best suppliers in Europe, always unique and striking pieces. The steel I use is predominantly laminated Japanese high carbon and stainless steel, from highly regarded foundries, via suppliers in Sheffield.

Every blade is heat treated precisely using industry leading equipment, yielding a refined and strong blade. Finally I thin, finish and sharpen every blade by hand on Japanese synthetic and natural wet stones for a razor sharp and clean cutting edge.

Combined together, these high quality materials and processes create knives that not only look and feel special, but perform to the highest level too.

Meet the maker.

Culinary knives have always been with me in some way. I can remember buying my first Japanese kitchen knife in my late teens. What little I had left of my student loan that should probably have gone on food, instead got spent on one awe-inspiring object to make food with. Shortly after that I bought my first sharpening stone, and the love affair with knives and razor sharp edges began.
